Mango Habanero Salmon Tacos
- 1 cup Mrs. Renfro's Mango Habanero Salsa
- 1 tbsp. olive oil
- 1 lb. skinless, boneless salmon fillets
- 1 tsp. ground cumin
- 12 6-in. flour tortillas
- 1 cup cole slaw mix
- 1 cup mango, peeled & diced
- ½ cup red bell pepper, chopped
- 1 avocado, diced
- ½ cup cilantro.
- Heat grill to 375° F.
- In shallow dish, combine ½ cup Mango Habanero Salsa with olive oil.
- Add salmon, turning to coat.
- Marinate for 15 minutes.
- Drain salmon; sprinkle with cumin.
- Grill over medium heat for 5-6 min. per side until cooked through.
- Meanwhile, warm tortillas according to package directions.
- Divide fish evenly among tortillas & top with cole slaw, mango, bell pepper, avocado, cilantro & remaining salsa.
