Roasted Salsa Meatloaf



  • 2 lbs. ground beef
  • 2 eggs, beaten
  • 3/4 cup breadcrumbs
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • Salt & pepper to taste
  • 3/4 jar Mrs. Renfro’s Roasted Salsa


  • 1/4 jar Mrs. Renfro's Roasted Salsa
  • 3 tbsp. corn syrup
  • 2 tbsp. ketchup


  • Combine meatloaf ingredients in a bowl.
  • Mold ingredients together and form into a loaf pan.
  • Bake at 350° for 1 hour and add glaze.
  • Bake for an additional 15 minutes.
