Tasty Sun Dried Tomato, Spinach & Olive Puffs


Ingredients: (64 Servings)

  • 1 jar Mrs. Renfro’s Garlic Salsa
  • 8 sun dried tomatoes
  • 25 imported black olives, pitted
  • 2 large handfuls fresh spinach
  • 1 large garlic clove, minced
  • ¼ cup grated parmesan cheese
  • 2 tbsp chopped chives, thyme & rosemary leaves
  • 4 sheets puff pastry

Directions:

  • In food processor add salsa, tomatoes, spinach & olives
  • Pulse until ingredients are in small chunks
  • Empty into bowl; add grated cheese, herbs & garlic, mix well
  • Lightly flour surface, spread out two sheets of puff pastry & add layer of salsa mixture to top
  • Starting from end, tightly roll each pastry into center, turn & roll other end to make scroll shape
  • Repeat with remaining puff pastries
  • Place rolls on parchment-lined baking sheet & refrigerate 1 hr
  • Preheat oven to 425° F
  • Remove pastries & cut into 3/4 in. slices
  • Bake 9 minutes or until puffed & golden brown
  • Serve warm or at room temperature
