Ingredients
- 2 cups cooked brown rice
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 can black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1/2 cup Mrs. Renfro’s Mango Habanero Salsa
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
Directions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken and cook until browned and internal temperature reaches 165°C.
- Reduce heat to medium and stir in black beans and corn.
- Add Mrs. Renfro’s Mango Habanero Salsa and stir until heated through.
- Divide cooked rice into four bowls.
