Ingredients:
Meatloaf
1 ½ pounds ground beef
1 cups dried breadcrumbs
2 tablespoons fresh flat-leaf parsley, chopped
2 large eggs, lightly beaten
1 medium onion, chopped
1 glove garlic, chopped
½ cup Mrs. Renfro’s Craft Beer Salsa
Glaze
¾ cup Mrs. Renfro’s Craft Beer Salsa
1 cup ketchup
1 teaspoon Worcestershire sauce
2 teaspoon brown sugar
Directions:
Preheat the oven to 350 F. Line a rimmed baking sheet with parchment paper.
Combine the beef, breadcrumbs, parsley, eggs, onion, garlic and Mrs. Renfro’s Craft Beer Salsa along with 1 ½ teaspoon salt and ½ teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
Transfer the mixture to the prepared baking sheet and form it into a compact oval shaped loaf. Bake the meatloaf for 30 minutes or until it reaches 145 F. While the meatloaf is baking, put the ingredients for the glaze in a bowl and mix together.
Remove the meatloaf and brush the top and sides of the meatloaf with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 F (about 15 to 20 minutes).
Let the meatloaf rest for 10 minutes before slicing and serving.
