Ingredients:

  • 2 tbsp. olive oil
  • 2 medium onions, diced
  • 6 cloves garlic, diced
  • 4 tomatoes, chunked
  • 1 tbsp. oregano
  • 1 tbsp. basil
  • 2 tbsp. red wine vinegar
  • 1 cup water
  • 1 cup Mrs. Renfro's Medium Salsa
  • 2 zucchini, chunked
  • 6-8 mushrooms, quartered
  • 1 bell pepper, chunked
  • Pasta of choice, cooked to package directions

Directions:

  • In olive oil, sauté 2 medium, diced onions and 6 cloves of diced garlic.
  • Add 4 chunked tomatoes, oregano, basil, red wine vinegar and water.
  • When tomatoes soften, add Mrs. Renfro's Medium Salsa, zucchini, mushrooms and bell pepper.
  • Simmer 20-25 minutes.
  • Serve over pasta.
