This corn relish is absolutely delicious!! It is a must have for tacos!! Don't change a thing corn relish, you are perfect the way you are!!😍
Really this is the closest to what my Mom canned in the summer. We all helped and loved the flavor. Mrs Renfros is so good.
I was out of the traditional ingredients to make potato salad so I got creative and used a jar of Mrs. Renfro's Corn Relish to fill in! It tasted delicious and a friend asked me for my recipe. So I thought I would share it with you and your fans!
10 potatoes
1 jar Mrs. Renfro's Corn Relish
3/4 cup mayonnaise
1/2 cup sour cream
3/4 tsp salt or to taste
1/2 tsp pepper or to taste
1 lemon juiced
1/2 tsp lemon pepper flavored Mrs. Dash
1/4 bell pepper diced
1/4 white onion diced
2 TBS mustard
Boil whole potatoes until fork tender (45 to 60 minutes) in salted water that covers the potatoes by two inches.
Combine all remaining ingredients and stir while potatoes are cooking.
When fork tender, transfer the potatoes to a bowl of ice and water. When completely cool, peel potatoes and cut into large chunks. Stir into the dressing, cover, and refrigerate. Ideally make it a day ahead and it will taste even better after the flavors have time to mingle.
This is a "sleeper!" Here is a product that has many uses including adding to a salad, endless uses! Super great flavor, and hot dogs, Wow!!!
This is one of my favorite offerings from Mrs Renfro's, although I admit to being a fan overall. The corn relish is very approachable in terms of heat but offers a complexity of flavor that eats above its price point! The layers of flavor come through whether you are adding it to a dish or piling it on a tortilla chip! May have to add it to my Chicago Dogs this summer!!!
