Roasted Salsa Meatloaf
- 2 lbs. ground beef
- 2 eggs, beaten
- 3/4 cup breadcrumbs
- 1 medium onion, diced
- 1 medium bell pepper, diced
- Salt & pepper to taste
- 3/4 jar Mrs. Renfro’s Roasted Salsa
- 1/4 jar Mrs. Renfro's Roasted Salsa
- 3 tbsp. corn syrup
- 2 tbsp. ketchup
- Combine meatloaf ingredients in a bowl.
- Mold ingredients together and form into a loaf pan.
- Bake at 350° for 1 hour and add glaze.
- Bake for an additional 15 minutes.
